Yes, all 5 Fradiavolo doughs are available for any pizza on the menu. The Classico and Sottile doughs are included in the base price. The Nero (vegetable charcoal, +€1.50) and Integrale (low-carb, +€1.50) doughs have a surcharge. The Senza Frumento dough has a +€2.50 surcharge.
The Classico dough is made with soft wheat flour from Molino Bongiovanni: high crust, soft and very tender. The Integrale is a low-carb dough made with a multigrain flour blend (whole wheat, spelt, rye, flaxseed, oat and wheat bran): it is more rustic and fragrant. Note: Integrale contains soy (soy lecithin) and traces of sesame, in addition to gluten.
No, the Nero dough does not alter the flavor of the pizza: the taste is practically identical to the Classico dough, with the same high crust and softness. The black color comes from powdered vegetable charcoal, which enhances the digestive properties of the dough.
The Senza Frumento dough is made with naturally gluten-free flours, but it is not suitable for celiacs. Our kitchens also process doughs containing gluten, so there is a real risk of cross-contamination. If you are celiac, we recommend informing the staff before ordering.
Yes: the Sottile is our Roman-style dough — low crust, crispy, the only one of our 5 doughs without the classic high cornicione. It is available at these Fradiavolo pizzerias: in Milan (CityLife, Arese, Sempione, Bicocca), in Rome (Trastevere, Ostiense, Parioli), in Turin (IV Marzo), in Florence (I Gigli) and in Rimini. We are introducing this dough at other locations too: contact your favorite pizzeria to find out when it will be available.
Thanks to slow leavening: our doughs rest for a long time before being baked, allowing the starches to be partially pre-digested. The result is a light, soft pizza that is much easier to digest. The vegetable charcoal in the Nero dough further contributes to digestibility.
The vegan pizza available at all Fradiavolo locations is the Marinara (La Concettina Tomato, Garlic, Oregano, Basil). Some vegetarian pizzas can be made vegan by substituting mozzarella with Dreamfarm plant-based mozzarella (almond-based, made in Italy): ask the staff to verify availability at your pizzeria. Please note: Dreamfarm plant-based mozzarella contains almonds (tree nuts — EU allergen). Not suitable for people with nut allergies.
Several Fradiavolo pizzas are vegetarian, including: Margherita, Margherita più, Margherita doppia mozzarella, Bufala, Marinara, Ortolana, Fata Zucchina, Porcino e contento, Stranger chips. The Cacio e pepe pasta dish is also vegetarian. The menu is updated periodically: always check the available options at your pizzeria.
We offer a Senza Frumento dough made with naturally gluten-free flours. Note: it is not suitable for celiacs, as the kitchen is shared with gluten-containing doughs and we cannot guarantee the absence of cross-contamination. Always inform the staff of your dietary requirements.
All Fradiavolo pizzas can be ordered with Dreamfarm 100% plant-based mozzarella, our long-standing partner: it's made in Italy from almonds, completely lactose-free and dairy-free. Just ask the staff and you can enjoy it on any pizza on the menu. Note: contains almonds (tree nuts — EU allergen).
